What you need

A French press large enough for 500 ml, a kettle, coffee, and a timer. A scale makes the recipe easy to repeat.

Make your first cup

  1. Rinse the empty press with hot water and discard it. Add 30 g of ground coffee.
  2. Start your timer. Add 500 g of water just off the boil, leaving room for the lid. Stir gently to wet all the grounds.
  3. Rest the lid on top with the plunger raised. Steep until 4:00.
  4. Move the press onto a stable counter. Press slowly; stop if you feel strong resistance.
  5. Pour all the coffee into cups or a carafe. Coffee left on the grounds keeps changing in flavor.

Adjust the next cup

If it tastes harsh and dry, try a slightly coarser grind. If it tastes thin or sharply sour, try slightly finer. Change one thing at a time.

One useful thing

A little sediment is normal. Pour gently and leave the last sip if you prefer a cleaner cup.
